Tailgate food: What's your favorite?



I was wondering thru the grocery store last Friday thinking: "man, I always get the same food for tailgating, I need to expand my horizons" but to no avail.

I found myself yet again grilling brats burgers and sausages, and yet again found the stable of reliable mainstays to be satisfying yet boring.  I've seen people cook everything from beer-can chicken to bar-b-q ribs over coals, I've seen chili, kabobs, fish, dips everything.

So this time around I need some suggestions:  How do you roll?  What are your all time favorite recipes and foods at a tailgate?

Huh?

I would think hot oil on pavement would be a recipe for total disaster. It seems like it might kill the grass, but it wouldn’t go nearly as far if you spilled it on turf.

My advice is to NOT spill hot oil.

However, you can clearly find our tailgate spot when no cars are around, as we’re the ones with a giant oil stain on the pavement where we set up our fryers. Over the years, a bit here and a bit there add up.

Oh, I've seen some things. I know.

We’ve had to bail out excess oil (400 degrees, mind you) by using pots and dumping the oil into some bushes. Things happen when you mix alcohol + dangerous things.

We did it

Last year for a nice Thanksgiving meal before the Michigan State game. Just gotta make sure that thing is thawed the whole way through or else you might be seeing a nice explosion of hot oil.

We deep fry turkey every game we go to! The next turkey will be deep fried on Sept. 26th with all the works and injectors most likely in lot 23 where we will feast and play civil war before venturing to lot 12.

My general philosophy

is I don’t tailgate with anything it takes more than one utensil to eat. My favorite is shrimp wrapped in bacon. I’ve also made chili and cheese burritos that are pretty bad ass.

It’s either got to cook fast or in the alternative, not require a whole lot of attention.

And I’ve totally seen somebody deep fry a turkey at the stadium.

I have been on a jalapeno kick

I have been taking my fresh jalapenos and cutting them in half and putting cheddar in them and grilling, they go great with any grilled food. The other new item this year is grilled apricot halves with goat cheese in them, they are awesome for dessert. Otherwise I like some burgers or ribs (precook at home).

I try to go utensil free

I usually stick to burgers and dogs, so you can eat one with hand and use the other for throwing around the football, drinking something.

Last weekend we added bacon-wrapped sweet italian sausage sandwiches to the menu

mmmmm, delicious.

This weekend we are doing pulled pork sandwiches, chicken wings, and hot dogs.

But my favorite tailgate food is very simple – a nice and juicy bacon cheeseburger.

Whenever I’ve had them, somebody throws them in a crock pot and you just end up with a stew after a few hours.

Just grill 'em up

toss some in hot sauce
toss some in BBQ sauce

then try some wrapped in bacon.

For every game this year, I am taking a pound of bacon, and I am going to wrap random things in bacon and see how they turn out.

I think there are only 2.5 ways to go here:

1. Deep fry them & toss in a homemade sauce. This is our approach
2. Grill them

Or, possibly, buy them from Damon’s on your way up Porter Road and eat asap, assuming you drive in/park in that general area of Damon’s.

I make the on the flat top…mix the wing sauce the night before we go to the game and get some nice fresh rolls…can’t be it…

I always did Chili

and when I came to TX it became a staple of watching the Lions on Saturday… Now twelve years later, Penn State Chili has morphed into the mirror image of its namesake – Flexible ingredients that look plain at first but pack a mighty wallop not to be underestimated.

Last week I added andouille for the first time (cajun wife influence) and it added that little smoky flavor for extra deliciousness.

Before...

I’ve found that cooking chili at least the day before and then chilling it lets the flavors really blend together better. Especially if you’re mixing media with different peppers and meats – It takes a little while for the chili oils to penetrate the meats fully.

I go with the same approach. Make one, if not two days in advance. Then, simply re-heat.

Be prepared, it gets a bit hotter/spicier once the flavors have a chance to merge together.

Allow a different prospective

I pull it together on the grill.

Take whatever meat you’re going to use, and sear it off on the grill. In a disposable aluminum pan combine a jar of salsa, a beer, and two tablespoons of tomato paste. After the meat is seared off, put into the pan, cover and and let simmer at least two hours at 300 degrees.

It should shred pretty easily or be cubed off into a pretty serviceable chili, the longer you let it go the better, but it works pretty well.

Not sure how that would work but it seems like a quick way to go… kind of a lot of work in a parking lot though…. I’d have to see it in action to give a true opinion

I was afraid something called the "Brown Bomber"

was going to be more pictures of people pooping their pants.

We do something similar, but without ground meat. Instead, we take hot dog (split open) + cheese + bacon, then top with mashed potatoes. Great stuff.

My preferences

are as follows:
Breakfast would consist of a breakfast sandwich consisting of English Muffins, Egg, Cheese, Spam or everyones favorite “BACON” Washed down with a Captain and Coke w/ a beer chaser.

Snacks consisting of: Hot Bologna, Cheese, Helocher’s Dipping Mustard, Home made hot peppers, home made bread and butter pickles, Middleswarth BBQ Chips and washed down with a Captain and Coke w/ a beer chaser.

Main meal: Smoked Turkey(not deep fried) with stuffing and gravy washed down with a Captain and Coke w/ a beer chaser.

However, We will be smoking ribs the week-end of the IOWA game. If they do not turn out well, I will be blaming IOWA.

Tailgate breakfast

When tailgating time falls during breakfast hours, one of my usual hangouts typically has either breakfast burritos or egg casserole that get warmed up in the aluminum foil pan on the grill. I swear there’s no better breakfast than a combination of sausage, eggs, cheese, and bread, washed down with Kentucky coffee.

i love anything that psugirl cooks for me at tailgates

my cooks at the tailgates serve the best food. everything from quishes, to burgers, anything deep fried you can imagine and of course last year was our amazing christmas dinner special.

I'm also a fan of this stew-

it’s got corn, malted barley, and some other grains… you have to boil it, collect what evaporates off and store it in a barrel for a few years, but the result is well worth the wait.

My favorite taitgating food have been the odd ones you don’t expect to get when you show up, but it usually ends up being the soups, stews, and chilli. Last year at the MSU game someone made authentic Irish beef stew, it was outrageously good in that kind of weather. I’ve also had some unbelevably good chili up at tailgates… For some reason I end up preferring the stews, chilis, and soups — I think it suits the weather, and they usually have more flavor since they’re made at home the night before in a full kitchen.

favorite foods

I can’t say i really have a favorite. We mix it up a lot at our tailgates and sometimes even have a theme. We do breakfast and dinner for noon games. Breakfast is anything from pancakes, bacon, circle bacon (taylors pork roll – it rocks), sausage, filled pancakes (also a fan favorite) eggs (fried, scrambled or omeletes) bagels donuts etc. each week there is a variety of the above.

Lunch/dinner fair consists of everything from burgers/dogs to pulled pork, flank steak, orange burbound chicken, pork tenderloin, carne asada. We have also used the large turkey fryer to make wings at the tailgate. You name it and we will try it. We also have a soup nazi tailgate each year for the one of the cold games which includes homemade, chili, chicken corn soup, baked potato soup etc. We have a large tailgate group so lots of choices each week.

Lots of it is marinated or made before hand at home and either grilled or reheated in pots on burners.
