It has been a long few weeks, the news and unfolding events are of no comfort, and "good spirited tailgating times" are a distant memory in our minds. That being said, I've decided to tread on and continue to post some BSD food posts.
Why? Because, when the times get tough and hard and ugly, us foodies continue to cook. In fact, Italian foodies tend to cook even more than before. WE ARE... the people who hold the key to sanity in a cruel and confusing world! On that note, I present to you:
FRICO!!! Which I hope you will all find to be a FREEKIN' respite and stress reliever!!! After all, we all need to eat...
Frico are Italian Parmesan Cheese Crisps and are REALLY FREEKIN' easy to make (I made all of these in about 30 minutes):
Hot out of the oven these cheese crisps are extremely pliable and can be placed/tamped/molded into a mini-muffin pan to form little baskets... which are great for holding "Snacks on Snacks". After they have cooled, fill 'em with whatever makes you and yours happy. Pictured here is Joe's favorite. Frico filled with hot-pepper crusted salami, fresh mozzarella, garlic-y olives and strips of roasted red pepper:
