If you have ever been to Iowa, even if it's just passing through the state, you have learned that pork rules. The flying pig is the Iowa State Bird, and, corn, which is the exalted hog's favorite food, is the Iowa State Flower!
I remember a layover in an Iowa airport. Joefromboalsburg and I watched a man eat a giant, astonishing looking sandwich. It was almost a comical sight. As I came to learn (on my second trip to Iowa, when we went to watch Penn State play Iowa for our first Big 10 game in Kinnick Stadium back in 1993), that man was eating one of their famous "BPT" sandwiches:
A batter-dipped, deep-fried, pounded pork tenderloin cutlet, that is at least TWICE the size of the Kaiser roll it gets served on!!!
It was on this second trip that I actually ate one myself. In a world that is currently under siege against super-sizing, here is the conclusion I quickly came to:
No good can come from down-sizing certain foodie pleasures!
If just looking at a picture of this sandwich does not give you heart palpitations, in Iowa, they typically serve it with a side-dish of Creamy Five-Cheese Macaroni & Cheese!!!
In the event the sandwich is a bit much for some of you, I've decided to stray from cooking strictly our opponents food this week and cook something that, I think, Coach BOB, and, some of you Patriots fans might like too. How about my Creamy New England-Style Clam & Corn 'Chowdah'!
Lastly, just 'cause it's Fall, and I know we BSD'rs have avid dessert fans:
Pumpkin Bread + Apples = Bread Pudding!!!
