There was barely any time here in Happy Valley to lick our wounds from the loss to OSU before the East Coast was swept up in and swept away by Hurricane Sandy. What they eat in Purdue and what to cook for PSU tailgate this week was the least of my concerns (as I have close relatives who live "down by the seashore").
Briefly: I hope this finds all of you safe and sound, and, everyone you know safe and sound!
Comfort Food: Scrumptious Beef-Barley, Tomato-Vegetable Soup. I cooked this recipe on Sunday (finished picture above). It was the day after our loss to OSU and I woke up in the AM, with a hangover, wanting to cry in my soup. Thankfully, our own Willie Green and I had a discussion about recipes for easy-to-make soups on last weeks SOS post. He mentioned that beef-barley was one he was wanting to try. V-8 is my secret ingredient, and, after using a bit of it to make a much-needed Bloody Mary, the rest of the can went into Willie's pot of soup:
Hugs: A Simple and Sensible Yankee Pot Roast. It was Tuesday. The rain had started, the wind was blowing and we were afraid of losing power. Because I have gas cooktops, I can use my stovetops when the electricity goes out, so, what could be better than: A meal that could simmer away on my stovetop long into the deep-dark powerless night:
Humble Pie: A Chocolate Peanut Butter Cup Pie to be exact. As hard as I tried, I couldn't stop thinking about that lost to OSU and those "Buckeye Ball" peanut butter and chocolate candy things they eat out there. In order to get over it:
Joefromboalsburg says, "that is one slick looking pie"!
