Not for nothing, but Big 10 midwestern food is starting to drag on like a loose tailpipe along the interstate... it is exhausting. So, like the chef in the movie "Big Night", who, when faced with serving pasta as a side dish with a risotto entree, I went ballistic. For at least the immediate future, I can no longer make midwestern meals look good. This week, I said, "to hell with the Philistines who would not know good food if it came up and bit them in their corn-husking arses". I'm am going Asian for the Nebraska game. I just love the smell of garlic, ginger and soy sauce the morning after a VICTORY, and, you're looking at a photo of some kick-ass moo shu pork!
Here in Happy Valley, we make our own moo shu pancakes too! Sure, you can buy them, but they are so easy-to-make, why would you want to? The Chinese have a neat trick for cooking two pancakes at once. They stack two of them, piggy-back, on on top of each other, roll them out to form one thin one, then, after cooking, peel them apart, to form two ultra-thin pancakes. Seriously, how NOT boring is that!
Traditionally, the pancakes are folded into quarters and placed on a plate next to a bowl full of spicy moo-shu pork filling. Everyone stuffs and rolls their own moo shu sandwiches 'burrito-style', then, eats like there is no tomorrow. What a great tailgate this makes!
