Happy Holidays to all BSD'rs! Wouldn't it be great if we all could just relax and enjoy those few precious days off from the workplace in a manner befitting us sports fanatics? You know: feet up, channel changer in hand, pitcher of drinks to one side, laptop set to the the BSD newsfeed on the other, and, an easy-to-prepare, budget-friendly, gourmet meal (or two) cooking in the oven!
Believe it or not, you can!!!
Allow me to put some time back on your game clock by sharing a couple of easy and awesome recipes!
Got a bit of flour, butter, milk and a couple of spices hanging out in your pantry and refrigerator? In less than 15 minutes you can make enough of one of the world's most famous "mother" sauces to make both of the following casseroles. This classic white sauce is called Bechamel in France and Greece, and, Balsamella in Italy!
In one casserole dish, layer a bit of steamed rice and top it with some lightly-sauteed seafood of your choice (crabmeat, lobster, shrimp or scallops). Spread three-quarters of that white sauce over the top, sprinkle with some grated cheese, bake for 30-40 minutes and voila:
French Seafood Gratinee (serves 6-8-10):
For the other casserole: Cook and drain a box of jumbo pasta shells. In a big bowl toss together some ricotta, mozzarella, provolone, spinach and a couple of eggs. Stuff those shells and place them in the casserole dish as you work. Top with your favorite "gravy" (red sauce), the rest of the above white sauce and some Parmigiano-Reggiano. Bake for 30-40 minutes and voila:
