Hope you and yours had a wonderful holiday. Nothing puts people in the holiday spirit (besides a few cocktails, a great meal and a few more cocktails) more than watching a few inches of pretty white snow fall to the ground. Nature did not disappoint us this year!

When you have to return to real world activities the next day, and the snow does not stop, in my foodie world, "O be joyful" turns to "O be bitchy" really fast. My foodie game plan is always scheduled several days in advance, and, without FedEx, Amazon, and a few trips to a few stores, I feel like I've been thrown under the bus!

On Thursday, with the snow still falling, I found myself "pantry cooking" (and a few days behind on blog posts). Then, yesterday, with the snow still falling, it occurred to me that a lot of you are pantry cooking too, so, I got my foodie ass back on track and put the dang posts up on KE. Today, with the snow still falling and a two-day delay: Snacks on Snacks!!!

If you've got a rice mix in your pantry and a chicken breast or two in your freezer, try my E-Z Chicken & Rice Dinner "a la Uncle Ben". Jesse. and his brothers affectionately named this one "Uncle Ben's Chicken" many years ago:

If you've got a couple of carrots in the vegetable bin, grab your maple syrup and make some Oven-Roasted, Maple-Glazed, Candied Carrots to serve with that chicken dinner:
