I woke up on Monday morning and my horoscope told me in no uncertain terms that I was to "stick to the basics" this week. It went on to say that the success of my week would be determined by people who "rely upon me for my method of doing things". This sounded pretty ominous, so, I decided to make it VEAL WEEK over on KE!!!
Nothing is more basic than veal stock. This is white veal stock. When properly prepared, white or brown veal stock is gelatinous:
Ossobuco seemed like the natural progression after that. One needs veal stock to make it, and, who doesn't love a perfectly braised veal shank... w/gremolada too?
