It is Thursday, and, I refuse to let one week go by without a food post on BSD. This week, I just happened to get hungry for pasta salad. I'm not talking about the kind made with Wish-Bone Italian dressing and chunks of pepperoni either (not that there is anything wrong with that). I'm talking easy-to-make, from-scratch, meals that you'll want on your Summertime dinner table, in your brown-bag-it lunch, and, at your upcoming tailgates (or at least I think you will)!
First, let's start with an Asian Pasta Salad: Chicken, Broccoli, Red Bell Pepper, Scallions & Spaghetti (or soba noodles) with my quick-to-make honey-sesame dressing:
If Asian isn't "your thing", go Greek. Shrimp, olives, feta and red onion w/my to-die-for lemony-garlic dressing:
Now... a Honey and Sesame Pita snack that goes with both pasta salads? Yep. Honey-sesame pita crisps. Less than five minutes to assemble and 3 minutes under the broiler. These babies can be made in mass quantities 3-4 days prior to serving them and left out on your countertop (uncovered) for passersby to snack on for as long as they last:
As always, the recipes can be found on jessedotsmom's foodie blog
Your easily-amused PSU foodie mama,
For the glory,
Mel.
