I like to try different types of meat, and tonight I accomplished a long standing goal of eating horse meat.
I seared and roasted it, and served it with a blue cheese sauce. Here is the recipe I used.
Of course, the only way to eat any kind of meat like this is rare to medium rare. The taste was actually a lot like beef, with a very, very slight gamy flavor. It was very lean and a little tougher than I expected, but I probably could have cooked it a little less. Regardless, it was delicious, and I look forward to now having horse burgers, horse roasts, and maybe even horse sausages...er, um, you know what I mean.
Maybe now, Mr. Ed will learn to keep his goddamn mouth shut.
