This is the time of the year for strawberries. So, in keeping with doing something different, like BOB releasing a depth chart in June, I was trying to come up with a post that is different from the regular procession of jam, preserves, pie, and shortcake recipes.
Then I remembered visiting Anaheim many moons ago (I swear to God, Disneyland was closed, and we were not convicted of terrorizing the rollercoaster operator). We had lunch at a local pub owned by a Chinese guy who was married to a Latino gal from New Mexico. He served his quesadilla with a spicy chicken, onion, black bean and queso fresco mixture, and topped it all off with a chunky, chile-laden strawberry hot sauce. This week, I tried to replicate the hot sauce and this dish. I ended up with a few other treats as well!
Gotta love those Chinese-Mexicans! Starting off with reconstituted guajillo chiles and some cayenne pepper to provide heat to a strawberry concoction....
We get a sauce for a truly delicious sweet, hot 'n spicy, Grilled Chicken, Vidalia Onion, Black Bean & Queso Fresco Quesadilla with Strawberry-Guajillo Chile Sauce:
This sauce also works great drizzled on ribs for a change of pace BBQ dish this time of year:
and, is a magnificent base for a Strawberry-Guajillo Ice Cream, as well as a great dessert topping!
