Did you ever feel that the world-at-large is conducting a so-called "Chinese fire drill " and you weren't notified or invited? Well I do. This is such a week here in my Happy Valley kitchen. The crazy part is, amidst the nut cases who are flying air-planes over the stadium, threatening to tear down statues, scrape names off of buildings and spew their general on-going hatred for PSU (using the victims as an excuse for their deplorable behavior), everyone here seems to be carrying on, in a very admiral fashion...
It's always been easy to live here because, well, things have always been "Peachy Paterno"... for me, that's been 34 years, for my husband, over 40. What amazes me NOW is: how easy it remains is to live here, even under these bizarre circumstances. People truly care. We care about the victims, we care about each other, we care about our reputation, and, mostly, we care about the truth being told. We care even more than we did before!
That being said, in my kitchen, when I'm faced with a "Chinese fire drill" of major proportions...
I make a big batch of Chinese fried rice! Feel free to use chicken, pork or shrimp. I happen to like boneless porkloin backribs the best:
This recipe takes me back to my first year living here at Penn State. I was 20... GOD... I was 20 once? I learned how to make this from a Chinese gal named Mae, and, I've basically never changed it. That was back in 1975... a kinder, gentler time in PSU history. This simple dish is a happy memory for me...
