Well my foodie Penn State football friends, it's time to plan your first tailgate, and, this one is a "biggie" for too many reasons to mention. In honor of that, I've decided to kick off the the Penn State football season by posting two of my most requested tailgate recipes. A "White Out" for the first game? There's none scheduled (that I know of), but, the best way for me to translate the excitement and emotions I feel this year is for me to share, for this first game, a couple of recipes I think your going to want to keep in your Penn State Tailgate recipe book!

Who wouldn't just love a big 'ole bowl of chili on any Fall day at Beaver stadium? What a dumb question... everyone would! This one isn't your typical 'bowl of red'. Mine is white, full of spice and everything nice, including: loads of diced chicken breast, ground chicken thighs, veggies and beans. Topped with white 'chedda', it's even 'betta' (it's a "white out" recipe folks, NO yellow cheddar)!

Did I just say bowl of chili? Be still my heart. What was I thinking. We are in the midst of a bowl ban! If your worried about the food police intervening on the scene with another crackpot sanction, DON'T SERVE YOUR CHILI IN FREEKIN' BOWLS! Try my recipe for ooey, gooey, cheezy, spicy burritos. Mine are filled with: refried beans, Mexican rice, and, my legendary white chicken chili. The spicy sauce takes less than a minute to make, and again, white chedda, makes it betta!
