Texans have a humorous saying, "Happiness can be bought and it's an appetizer called chile con queso." I have no allegiances to Texas, but, after last weeks unhappy ending to an error-ridden kind of sloppy game, I'm ready to buy into that. I'm making a vat of molten and sloppy "cheese feed" for this weeks game!
I'm sure you all have recipes for queso, but, as if you couldn't guess, mine isn't made from melted Velveeta or Cheese-Whiz. It starts with a velvety smooth, quick and easy to make cheddar cheese sauce. I use real-deal grated cheddar and a secret ingredient called: cheddar cheese powder!
Once the cheese sauce is made, which you can do several days in advance, fry up some seriously-lean ground beef with some pork sausage in some green onions and spices. In honor of Ro-Tel (one of the B1G Ten Network's early sponsors), add a can of their famous diced tomatoes and green chiles, along with a can of green chiles, and, another secret ingredient: chipotle chile peppers packed in adobo sauce!
Once my cheddar cheese sauce is added, you have, if I do say so myself, one of the best versions of chile con queso you've ever tasted!
